Grapes were selected from Mt Benson in the Limestone Coast region of South Australia where Cabernet Sauvignon is well suited in the cooler climate. Selected Cabernet parcels, which showed generous fruit concentration, were identified and treated in the Soft Press winemaking style. The juice was pressed off skins after only 12 hours contact and only the free run juice was used to minimize any harsh phenolics. Cool fermentation temperatures were then carefully maintained to ensure retention of varietal fruit characters. Approx alcohol 13.0%

Scarlet is a vibrant cherry red colour with beautiful highlights as it reflects the daylight. On the nose it displays vibrant berry fruit aromas such as cranberries and boysenberries. The palate is just as luscious with young wild cherry and blackcurrant fruit flavours. There is a touch of natural sweetness on the palate which is perfectly balanced by a refreshing hint of sherbet like spritz and clean acidity. This wine is easy to drink everyday, however especially on a beautiful summers day with friends. Equally, this wine will complement tomato-based pastas such as Fettuccine Amarticiana or spicy Asian dishes.
